Gaucho opens its doors on Edinburgh’s St Andrew Square

Gaucho Edinburgh has opened its doors on St Andrew Square

Celebrated Argentian steak restaurant Gaucho has officially opened its flagship restaurant and bar on St Andrew Square in Edinburgh.
Gaucho Edinburgh has a glass fronted bar over-looking St Andrew Square and an open-plan restaurant which seats 120 downstairs, alongside a glass private dining room, where the walls are adorned with more than 200 bottles of the exclusive Gaucho wine collection.
The restaurant’s interior design takes inspiration from the Ombu – giant trees which are a striking natural feature of the Argentine rural and urban landscapes – where Edinburgh diners can enjoy Gaucho’s globally renowned steaks as well as specially created fusion dishes, such as haggis empanadas made using locally sourced Scottish produce.
Gaucho’s wine list, which has been hand-selected by Wine Director Phil Crozier provides a choice of 130 Argentinian wines – some of which are exclusive to Gaucho and produced at the restaurant’s vineyard in Mendoza. These sit alongside an extensive range of Scottish whiskies, gins and Scottish craft beer.
Group Executive Chef Jamie Robertson, who is famous for working alongside celebrity chef Jamie Oliver, is also returning to his roots. Born and raised in Bonnyrigg, Robertson oversees menu development and supply chain for all 14 of Gaucho’s restaurants.
He said: “Scotland has a fantastic natural larder, and at each of our restaurants we like to make the most of the local produce. As such I have really been enjoying creating some exclusive dishes for our new restaurant that celebrate and marries the provenance of Argentinian beef with Scottish flavours.”
Tracey Matthews, Group Chief Operating Officer at Gaucho, said: “It has been great to be able to welcome so many people to Gaucho and show them some fabulous Argentinian hospitality. The people of Edinburgh are so friendly – from those in the hospitality industry to business leaders – we really hope everyone will enjoy the first-class dining experience at Gaucho, which we believe is truly unique.”
